Kim’s vegan omelette
A real fake omelette a.k.a. the vegan omelette! Sounds great right? We gave our guestblogger Kim the opportunity to give her twist for the Orgran Easy Egg en stuffed it with flavorful vegetables. Great for an Easter breakfast or brunch.

Ingredients:
50 gram Orgran Easy egg
240 millilitres water
1 tablespoon olive oil
Half an avocado
A handful sprouts
1 scallion
1 clove of garlic
Optional: red pepper, cilantro, black sesame seed
Method:
Mix the Orgran easy egg with water into a smooth paste. Heat some olive oil in a sauce pan and bake the omelette golden brown on both sides.
Squeeze the garlic and chop the red pepper very fine. Sautee these with the sprouts for a few minutes.
Slice the avocado into thin pieces and chop the scallion into rings.
Serve the omelette and stuff it with the fresh and sautéed vegetables. Garnish with the sesame seeds and cilantro. Enjoy!
